I've posted about the benefits of smoothies before. The smoothie recipe with that post is a little more involved and has more nutrients! But my kids are been getting pickier (apparently that is possible). And to be honest I've been lazy, and that recipe has a lot of ingredients, which require more effort from me. I whipped up this 3 (well 4 in the photo) ingredient smoothie last night and it was a hit with most of us (my son still balked).
Ingredients are frozen fruit, some juice, some yogurt, and the picture has some ground pistachios on top (these actually tasted great but are TOTALLY optional).
Super Simple Smoothie Recipe
Makes about 4 cups of smoothie
- 2 cups frozen fruit (I used a mixed fruit blend but any fruit will work). You can use fresh fruit instead of frozen but you may want to add some ice to get the frozen feel in the smoothie.
- 1 cup juice (I used apple but any juice should work)
- 1 cup yogurt (I used plain, you can use what you have on hand. You could also use kefir instead of yogurt)
- 1/4 cup pistachios, ground, for topping (OPTIONAL)
Put everything (except pistachios) in the blender and blend until well mixed. Top with ground pistachios if desired. (I used this to grind my pistachios).
