This is my first Recipe Redux post! This month's theme is 7 ingredients or less for a simple meal during tax season. Those refunds should be coming soon, but in the mean time here is simple meal to enjoy.
Taco Quinoa Salad is a 7 ingredient dish packed with protein and flavor.
The 7 ingredients:
Taco Quinoa Salad Recipe
Serves 4 - 6
- 1 1/2 cups cooked quinoa
- 1 1/2 cups shredded cheese
- 1 cup black beans, cooked or canned
- 1 cup corn, thawed if frozen or canned
- 1 small or 1/2 large red onion, chopped
- 1 Tbsp salt free taco seasoning, or to taste
- Avocado, sliced
Make sure your quinoa is cooked (1 1/2 cups cooked quinoa is about 3/4 cup dry quinoa). Mix together first 6 ingredients and top with avocado slices.
This dish is excellent served warm or cold. This makes a great entree or side dish. It tastes great alone, on top of lettuce, or stuffed in a tortilla. If red onion has too much bite for your preference you can saute it before adding it to the mix or you can substitute green or yellow onion.
