Well, in December I was late to meal plan and then I only made a few recipes from the meal plan. Life happened and I did not plan ahead for thawing food, prepping, etc. But it's a new year, I get a fresh start. I've already done some meal prep this week, cooking grains, thawing meat, chopping veggies. And I am going to start posting my meal plan on the fridge to help me remember what needs done earlier in the week.

Pumpkin Gingerbread Muffins (for the freezer)
Cod in creamy red pepper sauce
Lentil and bulgur soup (from freezer)
Oven Pancake and Cinnamon Grapefruit
Garlic Mushroom Quinoa (may sub another grain and add canned salmon)
Peanut Noodles made with buckwheat noodles
