Lunches at our house consist of leftover or really easy to fix or pack foods. Today's Recipe Redux post is one of my favorite lunches! It's a great way to get some veggies when you're tired of salads.
Start with some whole wheat pitas. I usually buy mine from Trader Joe's. Ingredients in these pitas are: whole wheat flour, water, yeast, barley malt, salt, cultured wheat flour with added vinegar. (You could also substitute some tortillas if you can't find whole wheat pitas easily.)
Then add a few toppings and enjoy!
Hummus & Veggies Perfect Pita
Serves 1
- 1 whole wheat pita (about 4 - 5 inch diameter)
- 1 Tbsp Hummus (add more or less based on preference)
- 1/2 cup chopped raw or roasted vegetables of choice (pictured here: radishes, shredded carrots, green onions and cherry tomatoes)
Spread hummus onto pita. Top with vegetables. Enjoy!
Spicy Cream Cheese Perfect Pita
Serves 1
- 1 whole wheat pita (about 4 - 5 inch diameter)
- 1 Tbsp cream cheese
- 1/8 tsp crushed red pepper flakes (more or less per taste preference)
- 1 Tbsp green onions, chopped
Spread cream cheese onto pita. Sprinkle red pepper flakes on top. Add green onions. Add additional raw or roasted vegetables as desired. (My family prefers the plainer version of this one).
If you are sending Perfect Pitas in a lunch box you can cut into triangles and layer with wax paper or parchment paper and place in a container.
